What would your "I've already seen this" cut of a movie you're not quite ready to re-watch, but you like overall, look like?

My girlfriend wants to watch some longer movies again we've seen before and I had the thought "I'd be down if we could just skip ____ and ____ BS 30 minutes".

Thinking about it, it seems like a fun exercise. What would your edit of a movie you already know the premise of to make it highly rewatchable look like?
