Why does an entire movie happen between every X-Men movie now?

Hear me out, if we're talking about the mainline X-Men films (X-Men: First Class til X-Men Apocalypse and disregarding The Wolverine and Deadpool), there's almost entire film that happens between each movie we don't see. Don't believe me?

  • End of First Class: Xavier and Magneto have separated, Xavier forming his X-Men and Magneto, with Mystique, seemingly forming his Brotherhood of Mutants, and the two forces will surely face each other again
  • Beginning of DOFP: So at some point most of the brotherhood and the X-Men just ate it lol and Magneto tried to stop Kennedy from being assassinated but failed and went to superjail. Xavier is left with Beast alone at the mansion having lost his will to go on. Mystique is off being a fugitive and doing spy stuff.
  • Ending of DOFP: Xavier regains his will to fight for mutants, and Magneto speaks to the mutants of the world straight up calling for a Brotherhood of Mutants before running off to fight another day. and Mystique runs off before popping up impersonating Stryker for some inexplicable reason.
  • Beginning of Apocalypse: No wait Magneto just didn't follow up on that whole Brotherhood thing, and went into hiding (in plain sight really) and had a family. Whoops. Also Alex has a brother I guess. And Mystique at some point went from being a fugitive, to being an world renowned icon for mutants, til she just went back to being a fugitive. Oh and that whole Stryker thing never gets explained.

The whole trilogy has always felt a bit disjointed and weird in regards to the passage of time, and it occurred to me that really it's 5 movies, we just never see 2 of them.
