How much of a difference does the director make in a movie?

And I'm only talking about directors who don't also write said movies. Quentin Tarantino and Wes Anderson are completely irreplaceable to their works. But the what else is the directors main task? Like, say that Saving Private Ryan directed by someone like Benicio Del Toro? Would it be 100x different?

Do they like pick the camera angles and whatnot? Like what do the cinematographers do? (If that's not an actual alternate position I apologize :p) And also, what does a producer do?
